Their color is so intense, as the sunlight hit them, these tangy red berries called my name.<\/p>\n\n\n\n<p>Our neighbor in Wisconsin had row upon row of the vibrant fruit. I remember she would give us multiple jars of the sweet red jelly. &nbsp;However, I don\u2019t remember seeing them used in anything else.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"640\" height=\"480\" src=\"http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8190046.jpg\" alt=\"\" class=\"wp-image-28\" srcset=\"http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8190046.jpg 640w, http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8190046-300x225.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><figcaption class=\"wp-element-caption\"> <\/figcaption><\/figure>\n\n\n\n<p>Red currants are a superfruit, naturally high antioxidant capacity. &nbsp;They ripen in summer and if chilled to just above freezing, can last for about 4-5 weeks.<\/p>\n\n\n\n<p>So, with a such short window of the fruits\u2019 availability, I decided to experiment by adding the succulent berries to some of my favorite foods. I prepared my traditional, low and slow cooked ribs on the grill. Then pureed the sauce and boiled it down with a little white wine<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>I cherish finding my Grandmother\u2019s lost \u201cMost Excellent Zucchini Bread\u201d recipe but it was quite sweet.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"768\" height=\"1024\" src=\"http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8142990-768x1024.jpg\" alt=\"\" class=\"wp-image-27\" srcset=\"http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8142990-768x1024.jpg 768w, http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8142990-225x300.jpg 225w, http:\/\/katdeleonphoto.com\/Currants\/wp-content\/uploads\/2019\/01\/P8142990.jpg 800w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>The addition of the sours berries was the perfect balance to the sweetness of my Grandmother recipe. Add tonic water and a splash of gin for a refreshing summer treat.<\/figcaption><\/figure><\/div>\n\n\n<p>Of course, I had to try making currant jam, just berries and sugar. The fruit provided enough pectin for thickening. It was then it was spread amply on some warm, banana, currant and walnut bread! I had a little left, cooked less for sweet and flavorful syrup.
